On the 3rd Day of Christmas

As I wrap up the 10 days of recipes for Christmas  I give you a house special from
Great Scot:  Blackcurrant and Apple Pie with Juniper (a la Peter Wilson)!
I like to use a ready made crust in lieu of homemade for ease and timeliness! Whatever tickles your fancy! Merry, Merry Christmas from all of us! 
  • 1 15-ounce package short crust pastry, cut in half, room temperature
  • 1 and 1/2 lbs Granny Smith apples, peeled, cored, cut into 1/3in cubes
  • 9 tablespoons sugar, divided
  • 1/2 cup gingersnap cookie crumbs
  • 1/3 cup Mrs Bridges Blackcurrant preserve with Sloe Gin 
  • 5 squirts of Uncle Roy's Essence of Juniper 
  • 1 teaspoon grated orange peel
  • 1 tablespoon whipping cream


1. Preheat oven to 375F
2. Line 9in diameter glass pie dish with 1/2 pastry
3. Mix apples, 8 tablespoons sugar, cookie crumbs, preserves, and juniper in large bowl
4. Spoon filling into crust-lined dish and top with remaining pastry
5. Press crust edges together to seal
6. Crimp edge decoratively
7. Cut 1 in hole in centre of pie

Serve with cream or ice cream
