Mrs Bridges Christmas Marmalade Sponge Pudding

If you are anything like me you might find yourself in a baking kind of mood during these countless chilly winter nights. Searching for the perfect recipe (that doesn't require 3 trips to the grocery and a hunt down for an obscure specialty ingredient) is not always as simple as you might think . I prefer a recipe that only asks on-hand ingredients of me, and will satisfy my craving relatively quickly. It seems that nearly every flavor in our Mrs. Bridges collection is multi-functional and can serve as both a table-top offering as well as the perfect "secret" ingredient in a multitude of recipes. Here's a favorite for the holidays! Here's a hint; caster sugar is just a fancy way of saying super fine granulated sugar.  Enjoy!

Recipe

1. In a medium bowl, cream together the butter and sugar until smooth.
2. Mix in the egg and milk gradually, so as not to curdle the butter.
3. Sift in the flour, and fold in gently.
4. Put 4 tablespoons of marmalade in bottom of microwave-safe bowl. Pour in batter.
5. Cover and cook 7 minutes on full power, or until the pudding appears set when gently jiggled, and the top is sticky. Serve hot, great with custard.
